This month we're unveiling Ex Machina: a gin that's a true collaboration between art and science, humans and machines.
This splendidly smooth and sophisticated gin is the result of a project between Cambridge Distillery and the team behind Flavourbyte, an algorithm designed to take tasters into previously unexplored territory by suggesting scientifically-compatible flavours, and then handing over to a human expert – in this case, our Master Distiller William Lowe – to blend the final gin into existence.
"As the distillates and flavour combinations are so unusual, I often fall back on colours to describe this gin," said William. "It has a definite green note that comes from mastic, and the myrtleberry adds a soft roundness to the palate – it works with tonic very well, and has a robust flavour profile."
Ex Machina made its debut at (P)our Symposium last year, and has now joined the ranks of our experimental Prototype series of extremely-limited-edition gins.

We distil each of them individually – temperature, timing and pressure are just thraee of the nine variables that we tailor to each and every botanical to get the perfect flavour. We then expertly blend these individual distillates into a harmonious whole.
REACHING PREVIOUSLY UNATTAINABLE LEVELS OF QUALITY
Every single gin Cambridge Distillery have commercially released has been awarded at least a gold medal at international competition and we have been awarded three consecutive times as the most innovative distillery in the world. We still produce every bottle by hand in our distillery just outside of Cambridge city centre.
