In the depths of Winter, this fruity, floral Toddy is the perfect warmer. Delicate and fragile, the perfect pairing for the gentle botanicals of Cambridge Dry Gin.
Ingredients to serve 4:
200ml Cambridge Dry Gin
400ml Jasmine Tea, freshly brewed
100ml Peach Liqueur
20ml Demerara Syrup (see below)
Peach Bitters
Dried Guava to garnish (optional)
Demerara Syrup:
100g Demerara syrup
100ml Water
Method:
Begin with the syrup. Add the Demerara sugar & water to a small pan. Dissolve the sugar over a low heat then bring to a boil. Boil for 3-5 minutes until syrupy then cool. Transfer to the fridge and chill.
When ready, heat the tea in a pan until steaming. Add the syrup and combine. Add 50ml gin and 25ml Peach liqueur to 4 heatproof glasses and top with ¼ Jasmine tea mixture. Add 2 dashes of peach bitters, a slice of dried guava and serve. A hug from within.
