Lemon & Lavender Spritz for the arrival of Spring

For one to sip:

50ml Cambridge Dry Gin

10ml Lemon Lavender Syrup

5ml Lemon Juice

Soda Water & Ice to Serve

For the Syrup:

100ml Water

100g Caster Sugar

1tbsp Culinary Lavender Buds

2 Strips Lemon Zest

Method:

1. Prepare the Syrup:
In a small pan, combine the water and sugar over low heat, stirring gently until fully dissolved. Once dissolved, increase the heat and let it simmer for 3–5 minutes, allowing it to thicken into a syrup. Remove from the heat and infuse with lemon zest and lavender.

2. Let It Rest:
Allow the syrup to cool overnight, then strain it into a clean bottle and store it in the fridge until ready to use.

3. Mix the Drink:
When ready to serve, add the syrup, gin, and fresh lemon juice to a mixing glass with three ice cubes. Stir clockwise for 30 seconds, or until the glass feels chilled to the touch.
